Tôm tươi rửa sạch, bóc vỏ và để ráo nước. Thêm một chút muối cùng hạt tiêu vào bát đựng tôm và ướp một lúc cho đậm vị. Hành tây, ớt chuông đỏ và xanh rửa sạch, thái hạt lựu. Hành lá rửa sạch, thái nhỏ. Tỏi, gừng bỏ vỏ, thái miếng mỏng. Trộn các nguyên liệu làm nước sốt (trừ dầu mè) vào trong một chiếc bát nhỏ, khuấy đều cho tan đường. Đổ bột khoai tây, đập một quả trứng gà vào bát đựng tôm. Trộn đều sao cho bột phủ đều lên thân tôm.
Đổ dầu vào chảo, đun sôi. Thả tôm vào chiên qua rồi vớt ra thật nhanh. Tiếp tục đổ tôm vào chiên đến khi hoàn toàn chuyển vàng, hơi nâu thì vớt ra.
Đổ ớt khô vào một chảo dầu khác đến khi chuyển màu đỏ thì thêm tỏi, gừng, hành tây, hành lá vào đảo đều. Khi dậy mùi thơm thì đổ ớt chuông thái hạt lựu vào đảo tiếp khoảng 1-2 phút. Đổ nước sốt vào chảo, đun khoảng 2 phút. Thả tôm vào chảo nước sốt, đun đến khi sốt sền sệt hoàn toàn hòa quyện và thấm đều vào thịt tôm thì tắt bếp. Múc tôm ra đĩa và ăn kèm với cơm nóng.
